Blueberry and Pineapple Dairy Free “Ice Cream”

Summer is the perfect time to make recipes together with your children. This recipe is quick and easy to make! It is great to make and enjoy on warm summer afternoons. As more and more people develop or realize they have food allergies, it is helpful to have this type of recipe on hand. Dairy does not sit well with everyone, but who doesn’t love a yummy frozen treat in the summer! With just a few ingredients you likely have on hand, you can whip up this faux “ice cream” for yourself and some friends.

Blueberry and Pineapple Dairy Free "Ice Cream"

Course Dessert, Snack

Ingredients

  • 2 cups frozen blueberries
  • 1 cup frozen pineapple
  • 2 tbsp almond butter
  • 1 tsp vanilla extract
  • 1/4 cup hot water

Instructions

  • Begin by warming the water to almost boiling.
  • In a food processor, blend together all ingredients except the water.
  • Then, add the hot water to the food processor and blend again to an ice cream consistency.
  • Serve the ice cream and garnish with melon or apricots cut in ½” pieces or banana cut in rounds and then quartered. Nuts would also be a tasty garnish to add some texture.

Recipe Teaching Points

Gaining confidence in following instructions and directions in recipes, gathering and measuring ingredients, and adjusting ingredient quantities as needed are important life skills for children to develop. After trying this recipe and ice cream, your children might like to try other combinations of fruit that can also be made into ice cream. Let them experiment and see what they like and don’t like. Summer is a time for enjoying God’s blessing of fresh, flavourful, and colourful fruit.
