This is a recipe my brother and I crafted one day to go along with my mom’s famous potato soup. It quickly became a favourite in my family and now we make them with all kinds of soups!

Servings 12 Biscuits

Ingredients

  • ● 2 Cups flour
  • ● 1 Tablespoon baking powder
  • ● 2 Teaspoons sugar
  • ● 1/2 Teaspoon cream of tartar
  • ● 1/4 Teaspoon salt
  • ● 2 Teaspoons smoked paprika regular paprika is also an option, but won’t give that smokey flavour
  • ● 2 Tablespoons chopped fresh rosemary (or 2 TEAspoons dried)
  • ● 1/2 Cup cold cubed butter
  • ● 1 Well-packed cup cheddar cheese
  • ● 2/3 Cup milk

Instructions
 

  • In a bowl stir together flour, baking powder, sugar, cream of tartar, rosemary, paprika, and salt.
  • Using your hands or a pastry blender, squish in butter until it resembles coarse crumbs.
  • Mix in cheese, then make a well in the centre, add the milk, and stir until dough clings together.
  • On a lightly floured surface, knead the dough gently for 10 to 13 strokes.
  • Roll the dough to 1/2 inch thickness and cut out with a round cookie cutter.
  • Transfer to a cookie sheet prepared with parchment paper and bake for 12 minutes or until golden.

Notes

Tip: If you don’t have a cookie cutter, you can use a glass with a 2 1/2 inch rim
