Saucy Leek Recipe: Leek Pot Pie

Leeks can be one of those vegetables you see in the grocery store but never buy because you don’t know how to use them. Leeks are from the same vegetable family as onions, garlic, shallots, scallions and chives. They are good to incorporate into your meals as they have antioxidants which provide a number of health benefits.

Leeks have a more mild taste than green onions even though they look similar. When preparing a dish using leeks, use only the white and light green parts. The dark green parts can be used in homemade stock as they have good flavour; they would just take a much longer cook time to tenderize. Make sure to wash the leeks well as bugs can be hiding amid their layers.

It can be hard to find a tasty family leek recipe, but this one is tried and true! This pot pie is easy to put together and produces a delicious meal. Even fussy eaters love this dish!
